Pasta Fresca by Blue Ribbon Farm

Our fresh pasta is unique in the way we use Maine fresh ingredients in all our pastas. Fresh Ricotta from Kennebec Cheesery in Sidney is the foundation for all our ravioli recipes. Kennebec Cheesery's ricotta is from 100% organic Jersey milk. Fresh Chevre cheese by Kennebec Cheesery is an ingredient in our 4 Cheese ravioli. Kennebec Cheesery milks grass fed goats from their beautiful farm overlooking Messalonskee Lake in Sidney, Maine. Blue Ribbon Farm’s home grown organic vegetables enhance the pasta flavorings and our own farm-fresh eggs are laid daily. Our whole wheat products are grown and milled in Maine at the Somerset Grist Mill in Skowhegan and Aurora Mill & Farm in Linneus, Maine. Fresh pasta varieties include Tagliatelle, Bucatini, Tripolini, Penne, Radiatore, Fusilli, Gigli, Rigatoni, Bigoli (spaghetti), Pappardelle, Mafaldine, Caserecce, Chitarra, Angel Hair, Trottole, Bavette, Torchette, Amore, Conchiglie (shells - large and small), Canestri Rigatoni, and lasagna sheet. Our ravioli fillings change weekly according to what ingredients are in season. We add variety with seasonal ravioli fillings from our farm and surrounding farms, for example apple and winter squash fillings sweetened with local maple syrup in the autumn and winter months.
